FRUIT PIZZA

ONE OF OUR FAVORITE FRUIT PIZZAS EVER!!

It’s become a family favorite over the years, so I was excited to get the recipe so I could make it whenever I wanted. Now my own little family loves it, so we make it for special occasions and all summer long when we are craving sweet, cold fruity treats.

And did I mention the frosting has cream cheese? Yeah, eating a piece is a slice of heaven (no joke!)

Like any Fruit Pizza, you can make it completely customized with the fruits that YOU love. We always add strawberries, pineapple, kiwi, and bananas but the possibilities of fruit toppings are endless!


HOW TO MAKE FRUIT PIZZA

This delicious dessert is so easy! Here is how you can make this Fruit Pizza Recipe too…

Cream together butter, sugar and egg. Mix flour, cream of tartar, baking soda and salt. Add dry ingredients to creamed mixture.

Dip hands in flour and spread dough onto a sprayed pizza pan. Bake at 350 for 10 minutes. Let cool completely.

Make frosting by creaming together cream cheese, sugar and pineapple juice.

Right before serving, add desired fruit. We used bananas (we dip the bananas in pineapple juice to keep from getting dark), pineapple, kiwis, strawberries. Keep refrigerated until ready to serve.

NOTE: If you don’t have time to make a homemade crust you can easily grab a package of sugar cookie dough from the market. Heat the oven to 375 F. Press the dough into the pan and bake for about 13 minutes.


MORE TOPPINGS

Other toppings: Apricots, peaches, raspberries, sliced grapes, and mandarin oranges are all great choices to add to this fruit pizza. You can use the various fruits to create beautiful designs on the pizza. 

  • Patriotic: Use a red fruit like strawberry or raspberries, blueberries, and bananas
  • Christmas: Red fruit with kiwis and accent with a bright orange fruit like mandarin oranges.
  • Rainbow: You can either start at the center with red fruit and work outward or line the perimeter with red and work inward. Use layers of Red, orange, yellow, green, purple, and blue fruits
  • Different designs: Use different colored fruit to create stripes, circles/spiral patterns, medallion patterns, or just go crazy and pile the fruit on willy nilly.
  • Try out a different spread: Instead of the cream cheese filling use different flavored pudding, Nutella, lemon curd, yogurt, favorite fruit dip


MAKING AHEAD + STORING

Making ahead: You can prepare most of the ingredients a day beforehand, but don’t assemble the pizza until 2-3 hours before serving. If you need to store the pizza for a couple of hours cover it loosely and keep it in the fridge before serving.

  • Crust: cook, cool, and cover. Store at room temperature
  • Frosting stored in an airtight container in the fridge
  • Sliced fruit: store in separate containers in the fridge. Be cautious of fruits that become soggy or brown quickly. I suggest not cutting those until you assemble the pizza. 

Leftover pizza can be covered and STORED in the fridge for a day or so. The fruit and crust will become mushier and mushier the longer it’s stored so it’s best to eat leftovers fairly quickly.

  • 1/2 cup butter

INSTRUCTIONS 

  • Cream together butter, sugar, and egg.
  • Mix flour, cream of tartar, baking soda, and salt.
  • Add dry ingredients to creamed mixture.
  • Dip hands in flour and spread dough onto a sprayed pizza pan.
  • Bake at 350 for 10 minutes. cool.
  • Cream together 1 cube of cream cheese (8 oz.), ½ cup of sugar, and 2 TB of Pineapple Juice from Pineapple Chunk Can to make the frosting. Spread over cookie crust.
  • Right before serving, add desired fruit. We used bananas, pineapple, kiwis, and strawberries. (Dip bananas in pineapple juice to keep from getting dark.) Keep refrigerated until ready to serve.
